Abstract
The use of photoacoustic spectroscopy (PAS) for the absorptionof radiant energy and its subsequent conversion to acoustic energy by thermal expansion was analyzed. Investigations show that PAS instruments modulate the light source by passing the incident radiation through a beam-chopper. It was found that the modulation frequency effect the amount of sample interrogated. It was concluded that optothermal (OT) could be used for the rapid determination of fat, protein and moisture in a large variety of milk products.
